Quinoa Avocado Salad

This incredibly simple recipe gives you the nutty crunch of quinoa with the smooth creaminess of avocado, all in one protein-packed, tasty bowl.

Quinoa Avocado salad:
Serves 4

2 cups cooked quinoa, cooled

2 avocados, seeded, diced

2 cups cherry or grape tomatoes, halved or sliced

1 bunch cilantro, leaves only, chopped

½ cup scallions, sliced diagonally

6 tablespoons finely chopped almonds

 

Lemony dressing:

1/2 cup tablespoon olive oil

1/2 cup lemon juice (about 1 or 2 lemon)

2 Tbsp honey

Salt & pepper to taste

In a large bowl, combine quinoa, tomatoes, scallions and cilantro.  Add avocado, top with dressing and serve.
